Summer Berry & Goat Cheese Salad

Serves 4


Ingredients


  • 5–6 cups mixed greens (spring mix, spinach, or arugula)

  • 1 cup fresh strawberries, sliced

  • ½ cup blueberries

  • ¼ cup toasted pecans or walnuts

  • ½ small red onion, thinly sliced

  • 100 g goat cheese (or blue cheese), crumbled


Dressing



Directions


  1. In a small jar, combine the Lemon EVOO, Blueberry Balsamic, honey, salt, and pepper. Shake until emulsified.

  2. Arrange greens on a large serving platter or salad bowl.

  3. Top with strawberries, blueberries, red onion, toasted nuts, and crumbled goat cheese.

  4. Drizzle generously with dressing just before serving.

  5. Finish with an extra crack of black pepper and a few fresh herbs if available.
